The Fresh Market Recipe of the Week is…
Avocado Egg Bake
With beautiful, fresh, and not to mention HUGE avocados at the Market each week (thanks to Atkins Nursery), we couldn’t resist putting together a delicious and unique breakfast with them! This is the perfect way to create a farm fresh nutritious breakfast that your family will love too. This exact recipe was created by “Wellness Mama” at www.wellnessmama.com.
- 2 large avocados (atkins nursery)
- 4 farm fresh eggs (forgotten pastures)
- salt and pepper
- Toppings of choice: We recommend Mama Lydia’s Red Salsa or Fresh Green Salsa from Gourmet Tamales!
- Preheat the oven to 350 degrees. Cut the avocados in half and carefully remove the pit. Put avocados open side up in a large baking dish. If they are small avocados, scoop out a little of the extra flesh to make more room.
- Crack an egg in each avocado half and sprinkle with sea salt and pepper. Place in the oven for 15-20 minutes or until egg is desired doneness. Approximately 17 minutes
- Top with desired toppings while still hot and eat up! Yum!
