Remember to bring an ice chest in your car or on wheels so you can enjoy a nice dinner made fresh for you right at the market.  Also, keep in mind that MORE PARKING is always available in the First Baptist Church parking lot across from the Alpine Farmers Market.

The Fresh Market Recipe of the Week is…

Okinawan Cucumber Salad

RSFFMcucumbers-closerWith the beautiful bounty of Armenian cucumbers at the market now, it’s only fitting that we share a delicious recipe from Okinawa!  This is a slightly modified version to make it a little easier and because our produce is slightly differently that what they are growing in Japan, but trust me, the results are the same … a wonderful, cooling side dish for warm summer evenings.


What You Will Need and Where to Find it:
  • MINOLTA DIGITAL CAMERA1 1/2 pounds Armenian striped cucumbers, thinly sliced(Sage Mountain Farm)
  • 1/2 Tablespoon Himalayan Salt- coarse grind
  • 1 1/2 Tablespoons fresh squeezed lime juice (Atkins Farms)
  • 1/2 tablespoon agave nectar
  • 1/2 teaspoon tamari sauce (Wheat-free Soy Sauce)
  • 3/4 teaspoon sesame seeds
  • Asian Pears (Smit Orchards)
Place cucumbers in a bowl and sprinkle with salt, then set aside for 15 minutes, stirring occasionally.  Drain the cucumbers and then add the lime juice, agave, and tamari to the bowl and toss with the cucumber.  Place in refrigerator to marinate for 1 hour.  Sprinkle with the Sesame seeds and serve.  Yields 4 servings  Great with quartered Asian Pears for dessert!
